Guest Post! Cinnamon Donuts

1 box cinnamon cake mix
Raw Cane Sugar (optional) 
3 cups heavy whipping cream +
2 tsp Truvia (optional)


I know this recipe isn't from scratch but it is really fun! My twin sister, Laurel, made this and that is why this is a guest post. Do as instructed on the back of the box then pour mixture into donut molds evenly.  Bake 12-15 minutes. If you are adding the cream, put it in the hand mixer and add Truvia. Mix until cream is thick. Spread cream on donuts. Then sprinkle cane sugar on top of the cream.  

Apple Muffins

3/4 cup oat flour
3/4 cup oat fiber
2 tsp. baking powder
2 tsp. Truvia
1 1/2 tsp. cinnamon
1/2 tsp. each ground cloves, nutmeg, salt
1/8 Truvia

1/2 cup + 2 Tbs. egg whites
1/2 cup unsweetened applesauce
1/2 cup water
1/4 cup low-fat Greek yogurt
2 tsp. apple cider vinegar
1 tsp. butter extract
1/2 tsp. vanilla extract

1 cup chopped apples (do not grate apples;
this will make the muffin too wet)


I got this recipe from the Necessary Food cookbook. Whisk the dry ingredients. Add the wet ingredients and mix well. stir in the chopped apple by hand.Divide the batter evenly among 10 greased holes. Bake the muffins at 350 for 22-24 minutes or until the tops are dry and the centers don't feel squishy when you gently press on them. If you intend to eat the muffins warm, err on the long side of the baking time, but use less time if you intend to refrigerate and eat them later. Let the muffins cool for at least 5 minutes before slicing the best result. Store leftovers in the refrigerator.

Chocolate Chip Cookies

1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 tsp. vanilla
1 3/4 cups flour
1/2 tsp baking soda
1/2 tsp. salt
1/2 cup chocolate chips
1/2 cup walnuts (optional)

Mix dry ingredients and wet ingredients separately, and then mix them together. Form into balls on cookie sheet. cook 5-10 minutes

No Bake Cookies

Boil for 1 minute:
1/2 cup milk
3 Tbs cocoa
2 cups sugar
1/2 cup butter or margarine

Remove from heat and add:
1/2 cup peanut butter
1 tsp. vanilla
3 cups oatmeal

Put balls of dough on wax paper and cool.

WARNING: Very Sticky on Floor

Apple Crisp

4 cups tart apples
2 Tbs. lemon juice
1/2 cup flour (white/wheat)
1/2 cup brown sugar
1/4 cup butter
1 tsp. cinnamon


Peel core and slice apples into a 9-inch  pie pan. Season with lemon juice. In a separate bowl, combine with a pastry blender: flour, sugar, butter, and cinnamon. Work lightly so that mixture doesn't become oily. Spread mixture over apples. Bake for about 30 minutes.


Sugar Drop Cookies

2 1/2 cups flour
1 1/2 tsp baking powder
3/4 tsp salt
1 tsp cinnamon
1 cup sugar
3/4 cup vegetable oil
2 eggs
1 tsp vanilla


Mix dry ingredients and wet ingredients separately, and then mix together. make into balls and flatten with a fork and sprinkle sugar on top. Bake 10-12 minutes.



Peanut Butter Cookies

1/2 cup butter or shortening
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 tsp. vanilla
1 cup peanut butter
1-1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt


Mix dry ingredients and wet ingredients separately, then mix them together. Rol into balls on cookie sheet then criss-cross with a fork. Sprinkle sugar on top. Bake 5-10 minutes.

Apple Goodie

3-4 Tbs. Truvia
2 tsp. cinnamon
1/2 tsp. xanthan gum
1/4 tsp. salt
1 1/2 cup water
1/2 tsp. maple extract
 8 cups peeled and chopped apple

  

Topping
1 1/2 cups old fashioned oats
3/4 cups oat flour
5 tsp. Truvia   
1/2 tsp. baking powder
1/2 cup salted butter/ softened
1/2 cup water

Pour the apple mixture into greased      9''x13'' pan. For the topping, whisk the dry ingredients. Add the butter and mix with a hand mixer until crumbs form. Add the water and mix again.  Use your hands to spread the crumbs evenly over the apple filling. Cover the pan with foil and bake at 350 for 20 minutes. Take the foil off and bake for 10 minutes longer
or until apples are soft.

Sour Milk

           
I got this recipe and the Chocolate-Buttermilk Sheet Cake recipe from the 
Better Homes and Gardens Cookbook
If you don't have buttermilk on hand when preparing baked goods, substitute sour milk in the same amount. For each cup
of sour milk needed, place 1 tablespoon lemon juice or vinegar in a glass measuring cup. Add enough milk to make 1 cup total liquid; stir. Let mixture stand for 5 minutes before using.

Apple Goodie

INGREDIENTS

3-4 T. THM Gentle sweet (or more, for taste)
2 tsp. cinnamon
1/2 tsp. xanthan gum
1/4 tsp. salt 1 1/2 c. water
1/2 tsp. maple extract
8 cups peeled and chopped apples


TOPPING

1 1/2  cup old fashioned oats
3/4 cup oat flour
5 tsp. THM Super Sweet Blend
1/2 tsp. baking powder 
1/2 cup. salted butter, softened
1/2 cup. water


Whisk the first four ingredients together. Add the water and maple extract together and whisk again. Fold in the apples and stir to coat. Pour the apple mixture into a greased 9x13 pan. For the topping, whisk the dry ingredients. Add the butter and mix with a hand mixture  until crumbs form. Add the water and mix again. Use your hand to spread  the crumbs evenly  over the apple filling. Cover the pan with foil  and bake at 350 for 20 minutes. Take the foil off and bake for 10 minutes longer or until  the apples are soft. Add vanilla ice cream if desired.

Chocolate-Buttermilk Sheet Cake

INGREDIENTS 

2 cups all-purpose flour 
 2 cups sugar   
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter 
1/3 cup  unsweetened cocoa powder
2 eggs
1/2 cup buttermilk or sour milk
 1 1/2  teaspoons vanilla
1 recipe chocolate-buttermilk frosting


Grease a 15x10x1-inch or 13x9x2-inch baking pan; set aside. In medium bowl  stir together flour, sugar, baking soda, and salt; set aside. In a medium saucepan combine butter, cocoa powder, and 1 cup water. Bring mixture just to boiling, stir constantly. Remove from heat. Add the cocoa mixture to flour mixture and beat with an electric mixer on medium to high speed until thoroughly combined. Add eggs, buttermilk, and vanilla. Beat for one minute (batter will be thin). Pour batter into the prepared pan. Bake in a 350⃝⃝⃝     oven  about 25 minutes for the 15x10-inch pan, 35 minutes for the 13x9x2-inch pan, or until a wooden toothpick comes out clean. Pour warm chocolate-Buttermilk Frosting over the warm cake, spreading evenly. Place cake in pan on a  cool thoroughly.
CHOCOLATE-BUTTERMILK FROSTING
In a medium saucepan combine 1/4 cup butter or margarine, 3 tablespoons unsweetened cocoa powder, and 3 tablespoons buttermilk. Bring to boiling.  Remove from heat. Add 2 1/4 cups sifted powdered sugar and 1/2 teaspoon vanilla . Beat until smooth. If desired, stir in 3/4 cup coarsely chopped pecans.

Rice Krispie Treats


                                 
INGREDIENTS
                     
      3 tablespoons butter or margarine            
4 cups miniature marshmallows or 1 (10-ounce) package regular marshmallows
6 cups rice krispies          


In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Rice Krispie cereal. Using buttered spatula  or wax paper evenly press mixture  into 13 x 9 x 2-inch pan coated with cookie spray. Cool. Cut into 2-inch squares.
